Preservation....Still Going

We've done a fairly good job of preserving this year, but we still have plenty more to do. Our tomato harvest was a bit lower than I was hoping for, but I managed to get some sauce done and we've been enjoying a lot of salsa. To make my sauce I have an old Squeezo. It's amazing for getting the skins and sauce while maintaining the juices and pulp. It also works well for berries and grapes. In fact I'm hoping to get some grapes to make a few pints of jelly.

Apples have also been a the project of the weekend. We didn't find any really good wild trees this year, so we bought a 40lb box of second organic MacIntosh and Ellstars for $25. We got quite a bit of sauce and several half-pints of apple butter made. I think we'll buy another box this weekend.

$25.00 for 40 pounds of organic apples is sure a good deal.

My mom made great apple butter and she always put a pinch of vinegar in it.
It real spiced it up.

I love making applesauce. My grandmother made it all the time when I was a child, and it's for that reason that I picked it up. I only make it one batch at a time so that it lasts in the fridge just long enough for my husband and I to eat it. But I wonder... do you by any chance can/jar yours? I'd very much like to start learning to can, but the thought of all that can go wrong scares me just a little. I've heard that in order to can food items, you'll need low acidity and can't change recipes much, and I really wouldn't want to change mine. So if you do can yours, I'd be interested to hear how you go about it.

I am amazed by the price of food in the US, apples cost so much more here although at least this year I got some from our apple tree in the garden.

It was a good deal, but we just picked over 50lbs for free in town. We got permission to pick the high apples. More sauce and butter on the way.

Hello. Thanks for dropping by. Canning fruit is easy because they are high acid. A water bath is sufficient. Any recipe for applesauce will work I cook the apples down with some cider, press through a sieve, cook down the sauce some more and then can in a water bath. I can't remember the time off of the top of my head, but the USDA has times for individual fruits.

I have to agree. We have been getting some great shots of KIA. She's very photogenic I guess.

One definitely has to search out the deals. The price of apples at the regular grocery store are insane.
