......Turkey Shmurkey


I actually didn't even plan on making a Thanksgiving dinner, but after several cups of coffee, a toasty fire in the woodstove, and the setting sun approaching, I thought "what the heck". I decided on cranberries, roasted yams and kale glazed with olive oil and maple syrup, apple pie, spiced hot apple cider, and instead of turkey a Wisconsin favourite- beer cheddar soup. I used a good dark ale from our local microbrewery South Shore Brewery, Wisco cheddar, Wisco butter, and local dairy fresh milk. Hopefully my heart will still be beating by tomorrow. I hope everyone had a safe and tasty Thanksgiving.

coldh20: you're right I'm still alive

mone: It's sort of made up, but here are the basics:

1 small onion or medium shallot chopped
1 garlic glove
1 C dark beer
2 C sharp cheddar
4T butter
4T flour
1/2-1t red chile powder
3 C milk
salt & pepper to taste
garnish with scallions or popcorn (like a local restaurant does here)

*made a roux with the butter nd flour-set aside.
*saute shallots and garlic in a little oil
*add milk and brink almost to a boil then add the peppers and salt
*add roux and whisk
*when almost thickened lower heat and stir in beer and cheese. Gently reheat. Enjoy

crallspace: Thanks. I'm the same way-2 years. Unless one grows his or her own turkey or gets it from a local farmer, what's the meaning of being thankful about a factory grown turkey?
